Chocolate Chunk Banana Bread Mug Cake – A Warm Snack Ready in Just 5 Minutes!

BRRRR! When I walked our dog, Teddy, today it was 18 degrees out. Of course, this is his favorite time of year! He loves the cold weather! When I got back, I was ready for a warm snack. Then I remembered a recipe that was posted this week for 5-Minute Chocolate Chunk Banana Bread Mug Cake. With a name like that, you know it has to be good, plus it was developed by Tieghan Gerard, who has the Half Baked Harvest blog, and I always like her recipes.

This delicious warm and gooey snack is ready literally in 5 minutes! You just stir together the ingredients in a small bowl, pour into a mug and bake in the microwave for about 1 1/2 minutes. The recipe says to eat while warm and top with a bit of butter and honey. Perfect snack for a cold winter day!

Oh my goodness! Look at that melted chocolate! Yep – so good! I used a 10-ounce mug and the batter overflowed a bit, I think a 12 ounce mug would have been a better size. So easy and so delicious! Enjoy!

Ingredients

  • 1 medium overly ripe banana, mashed, about 1/3 cup
  • 1 tablespoon melted coconut oil or butter
  • 1 tablespoon honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup semi-sweet or dark chocolate chunks

Instructions

  • In a small bowl, stir together the mashed banana, coconut oil or butter, honey, egg and vanilla until combined. Add the flour, baking soda, cinnamon and salt. Mix until just combined. Fold in the chocolate chunks.
  • Pour the batter into a 10-12 ounce microwave-safe mug. Microwave on full power for 1 minute and 35 seconds to 2 minutes, it is better to under bake. Eat warm with a smear of butter and a drizzle of honey. Enjoy!

Bake Blossom Top Cookies for Valentine’s Day Treat

Have you seen the pink Reece’s Blossom-Top miniature peanut butter cups? All the taste of the original Reece’s peanut butter cups, but with a pastel pink color that will be perfect for Valentine’s Day or Easter treats.

This recipe is from Sally’s Baking Blog and it is very similar to the Peanut Blossoms that we all love to make at Christmas, but it has peanut butter cup instead of a chocolate kiss on top. Once the dough is mixed and chilled, roll the dough balls in granulated sugar or shimmer sugars.

You could also roll them in your favorite sprinkles. Then roll them again in granulated sugar, if you like.

Once the cookies are baked, let them cool for about 5 minutes, then gently press the pink blossoms in place. To prevent them from melting, you can pop the cookies in the freezer for about 5 minutes.

If you like peanut butter you will love these thick peanut butter cookies! Vary your cookies by using different kinds of sprinkles and sugars. You can also use chocolate kisses for these cookies.

What a fun and scrumptious treat plate! Add a few extra candies to add a bit more color. Happy Valentine’s Day!
