Chocolate Oatmeal Cake with Broiled Icing

Chocolate oatmeal cake….so dense and so chocolate! And so good! The broiled icing with the coconut and nuts is the perfect topping and adds a wonderful texture.

This is another recipe from my family recipe box. We used to make this when I was growing up.

Tasty dessert ingredients – vanilla, cocoa, oatmeal, coconut – and of course, eggs and butter.

Combine the oatmeal and the boiling water. Stir, set aside and let cool to room temperature.

Cream the butter and sugar, eggs and vanilla, mix. Add oatmeal mixture, stir.

Add dry ingredients and mix well.

Pour into lightly sprayed baking dish. Bake at 350 degrees for 40-45 minutes.

While the cake is baking, place all the icing ingredients in a small bowl.

Stir ingredients with a spatula.

Once cake is baked, remove from the oven. Set oven to broil. Gently spoon icing over the cake and spread to cover the top of the cake.

Broil for 1-2 minutes about 4-6 inches from the heat. Watch carefully.

Delicious with a bit of ice cream on the side. This is one of those desserts that is even better the second day! Enjoy!

Ingredients

Cake

  • 1 cup old-fashioned oatmeal (not instant or quick)
  • 1 1/2 cups boiling water
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/3 cup cocoa
  • 1 teaspoon soda
  • 1/2 teaspoon salt

Broiled Icing

  • 2/3 cup packed brown sugar
  • 1/4 cup melted butter
  • 3 tablespoons half and half, or milk
  • 2 tablespoons cocoa
  • 1 cup coconut
  • 1/2 cup chopped nuts, walnuts or pecans
  • 1 teaspoon vanilla

Instructions

Cake

  • Preheat oven to 350 degrees. Combine oatmeal and water, mix. Set aside and let cool to room temperature.
  • Cream butter and sugar, add eggs and vanilla. Mix. Add cooled oatmeal mixture. Mix to combine.
  • Add dry ingredients and mix well.
  • Pour into lightly sprayed 9 x 9 or 8 x 12 baking dish. Bake at 350 for 40-45 minutes until inserted toothpick comes out clean.
  • Once the cake is done, remove from the oven, set oven to broil. Lightly spoon icing over cake and gently smooth to cover the cake. Return to oven and broil 4-6 inches from the heat for about 1-2 minutes. Icing will bubble and start to brown. Watch carefully to prevent it from burning. Remove from oven and allow to cool on cooling rack.

Broiled Icing

  • Mix all icing ingredients together in a small bowl and set aside. Follow directions above to apply to cake.
