Ingredients
Cake
1cupold-fashioned oatmeal (not instant or quick)
1 1/2cupsboiling water
1/2cupbutter
1 1/2cupssugar
2largeeggs
1 1/2teaspoonvanilla
1cupflour
1/3cupcocoa
1teaspoonsoda
1/2teaspoonsalt
Broiled Icing
2/3cuppacked brown sugar
1/4cupmelted butter
3tablespoonshalf and half, or milk
2tablespoonscocoa
1cup coconut
1/2cupchopped nuts, walnuts or pecans
1teaspoonvanilla
Instructions
Cake
Preheat oven to 350 degrees. Combine oatmeal and water, mix. Set aside and let cool to room temperature.
Cream butter and sugar, add eggs and vanilla. Mix. Add cooled oatmeal mixture. Mix to combine.
Add dry ingredients and mix well.
Pour into lightly sprayed 9 x 9 or 8 x 12 baking dish. Bake at 350 for 40-45 minutes until inserted toothpick comes out clean.
Once the cake is done, remove from the oven, set oven to broil. Lightly spoon icing over cake and gently smooth to cover the cake. Return to oven and broil 4-6 inches from the heat for about 1-2 minutes. Icing will bubble and start to brown. Watch carefully to prevent it from burning. Remove from oven and allow to cool on cooling rack.
Broiled Icing
Mix all icing ingredients together in a small bowl and set aside. Follow directions above to apply to cake.
