These are delicious! They require a little prep time and planning ahead but easy to put in the oven and bake when it’s time. Add a salad or fruit and it’s a great evening meal.

Mix the water, yeast, sugar and 2 cups of flour and let rise until bubbly. Then add the melted shortening or oil, eggs, remaining flour and salt. Let rise; work down. If you prefer you can let the dough rise again.

In a skillet brown the meat. Italian sausage, hamburger, ham, pepperoni or any combination of meats can be used. Add enough spaghetti or pizza sauce to coat meat. I usually do not have ready made sauces and flavor the meat with tomato sauce and pizza spices-garlic, basil, oregano, cayenne peppers and parsley It should look like sloppy joes.

Divide dough into two parts. On a floured board roll the dough out into a large square or rectangle shape. Using a pizza wheel cut the dough into nine squares.

Place some mozzarella cheese or any other cheese in the center of each square. I like a mix of mozzarella and Parmesan.

Top each bun with the meat mixture. Adding onions, peppers or mushrooms makes these even better. Experiment and see what’s yummy. It’s important to put the cheese on the dough first so it will be on the top of the bun and it won’t run out and burn when it melts.

Bring the corners up and seal them by pinching them together. Make sure the edges are sealed well so they don’t “leak” when baked. Place sealed side down on a greased or lined cookie sheet. Let rise. If the filling is warm it won’t take long for the buns to rise.

Bake at 375 degrees for 18-20 minutes or browned. I cover the pizza buns with a little melted butter after removed from the oven.

If you happen to have any leftovers, they warm up great in the microwave.

This is a very easy recipe to personalize with your favorite flavors.

  • 1 3/4 cups warm water
  • 2 pkgs yeast
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 cup melted shortening or oil
  • 2 eggs
  • 3 cups flour
  • 1 tsp salt
  • 1 lb sausage or other meat
  • spaghetti or pizza sauce
  • mozzarella cheese

Instructions

  • Mix the warm water, yeast, sugar and 2 cups flour; let rise until bubbly. Then add the oil, eggs, remaining flour and salt.. Mix well. Let rise; work down. If you prefer, let dough rise again.

Place sealed side down on a greased or lined cookie sheet. Let rise. If the filling was put in warm this will not take very long. Bake in a preheated 375 degree oven for 18-20 minutes or until browned. Cover with a little melted butter after removing from oven and before serving.

Chocolate Oatmeal Cake with Broiled Icing

Chocolate oatmeal cake….so dense and so chocolate! And so good! The broiled icing with the coconut and nuts is the perfect topping and adds a wonderful texture.

This is another recipe from my family recipe box. We used to make this when I was growing up.

Tasty dessert ingredients – vanilla, cocoa, oatmeal, coconut – and of course, eggs and butter.

Combine the oatmeal and the boiling water. Stir, set aside and let cool to room temperature.

Cream the butter and sugar, eggs and vanilla, mix. Add oatmeal mixture, stir.

Add dry ingredients and mix well.

Pour into lightly sprayed baking dish. Bake at 350 degrees for 40-45 minutes.

While the cake is baking, place all the icing ingredients in a small bowl.

Stir ingredients with a spatula.

Once cake is baked, remove from the oven. Set oven to broil. Gently spoon icing over the cake and spread to cover the top of the cake.

Broil for 1-2 minutes about 4-6 inches from the heat. Watch carefully.

Delicious with a bit of ice cream on the side. This is one of those desserts that is even better the second day! Enjoy!

Ingredients

Cake

  • 1 cup old-fashioned oatmeal (not instant or quick)
  • 1 1/2 cups boiling water
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/3 cup cocoa
  • 1 teaspoon soda
  • 1/2 teaspoon salt

Broiled Icing

  • 2/3 cup packed brown sugar
  • 1/4 cup melted butter
  • 3 tablespoons half and half, or milk
  • 2 tablespoons cocoa
  • 1 cup coconut
  • 1/2 cup chopped nuts, walnuts or pecans
  • 1 teaspoon vanilla

Instructions

Cake

  • Preheat oven to 350 degrees. Combine oatmeal and water, mix. Set aside and let cool to room temperature.
  • Cream butter and sugar, add eggs and vanilla. Mix. Add cooled oatmeal mixture. Mix to combine.
  • Add dry ingredients and mix well.
  • Pour into lightly sprayed 9 x 9 or 8 x 12 baking dish. Bake at 350 for 40-45 minutes until inserted toothpick comes out clean.
  • Once the cake is done, remove from the oven, set oven to broil. Lightly spoon icing over cake and gently smooth to cover the cake. Return to oven and broil 4-6 inches from the heat for about 1-2 minutes. Icing will bubble and start to brown. Watch carefully to prevent it from burning. Remove from oven and allow to cool on cooling rack.

Broiled Icing

  • Mix all icing ingredients together in a small bowl and set aside. Follow directions above to apply to cake.

This recipe is another family favorite. It’s so easy to prepare and makes a quick tasty dinner or brunch.

I have made one half of the recipe in the pictures. A 6-inch square baking dish or a similar size works well. I have also doubled this recipe in a 9×13-inch pan.

Pour the salsa in the baking dish and swirl around to cover the bottom.

Sprinkle the grated cheddar cheese over salsa.

Mozzarella cheese is the next layer. Monterey Jack cheese or other varieties can also be used. Experiment and see what flavors you prefer.

Side note here: I love this kitchen scale. I often buy items in bulk and besides that I found myself guessing on weights or spending time looking up how to convert weight to cups. I bought this scale and can’t believe how much I use it and wonder why I didn’t get one sooner.

Back to the omelet-Blend the eggs in a blender and add sour cream and blend again until smooth and pour over the cheeses.

Bake until a knife inserted in the center comes out clean. It takes about 30 minutes for this one half recipe.

Serve with additional salsa, tomatoes or fresh herbs.

  • 1/2 cup salsa
  • 4 ounces cheddar cheese, grated
  • 4 ounces mozzarella cheese, grated
  • 6 eggs
  • 8 ounces dairy sour cream

Instructions

  • Preheat oven to 350 degrees. Pour the salsa into the bottom of a 10-inch quiche dish or pie plate. Sprinkle cheeses over sauce. In a blender container place eggs; cover and blend until smooth. Add sour cream; cover and blend again until smooth. Pour this egg mixture over cheeses. Bake, uncovered, in a 350 degree oven for 35-40 minutes or until a knife inserted near the center comes out clean. Serve with additional salsa, tomatoes or fresh herbs.
