Valentine Chocolate Kiss Cookies

If you love chocolate and Peanut Blossoms, then you will really love these Valentine Chocolate Kiss Cookies! Quick and easy to make!

Did you know that you can now buy “conversation” chocolate kisses? The bright pink, purple and blue chocolate kisses have little Valentine sayings on the bottom of each one.

Start by whisking flour, cocoa and salt. Cream butter and sugar, then beat in egg yolk, milk and vanilla. Add dry ingredients to egg mixture and combine. Roll into balls, about 1 tablespoon of dough in each.

Pour Valentine sprinkles into a small bowl and roll each ball into the sprinkles to coat. Place on a prepared baking sheet and bake 10-12 minutes.

Cool the cookies for 5 minutes on the baking sheet, then press chocolate kisses into the center of each cookie. Then transfer the cookies to a cooling rack to cool completely.

What a cute Valentine treat – but you can vary the sprinkles for any holiday or occasion.

Double-Shot Mocha Chunks

Fresh from the oven – gooey mocha chunk cookies! My sister, Laurie, sent me this recipe last week. She had just made them and said that they were amazing. These remind me of the Brownie Drops we used to make as kids, but these are enhanced with espresso powder and chocolate chips.

Laurie loves the espresso and chocolate combination, and I agree. The mocha flavor intensifies the chocolate – so good! These are very easy and quick to make- they only take about 20 minutes from start to finish!

These called for 1 cup of semi-sweet or bittersweet chocolate chips and 1 cup of chocolate chunks. Laurie had used Heath Toffee Bits in hers, so I did the same. I used 1 cup of chocolate chips, along with 1/2 cup of the Heath Toffee Bits and 1/2 cup of chocolate espresso chips.

Yum! These make small rounded chunky cookies – perfect for snacking! If you like a flatter cookie, just gently press the dough down before baking with your fingers. Fast – and Easy – and Chocolate – with a hint of Espresso – it doesn’t get much better than that! Enjoy!!!
