Make Your Own Nutter Butter Peanut Butter Sandwich Cookies

Did you know that you can make your own Nutter Butter cookies? Tastes even better – and definitely more healthy than the ones you buy in the store!

These cookies are simple to make and would be a fun family project. Another no chilling required recipe, so you can make these in about 30 minutes from start to finish. Just look at that creamy peanut butter filling!

You simply roll the dough in balls, halve each ball and push the two halves together. Flatten and then make a crosshatch pattern on each half with a fork. Bake and allow to cool. Mix up the filling and spread on one cookie, top with another cookie. Freeze for about 10 minutes before dipping in dark chocolate.

If desired, you can dip each cookie into melted dark chocolate.

Add a sprinkling of flaky sea salt, if desired. Let set to harden, or pop in the refrigerator for a few minutes to get a quick set, then ready to eat and share!

Note: I used 1 tablespoon of dough per cookie, as the recipe recommended. They were delicious, but I thought they were a bit thick. I would suggest flattening the cookies a bit more, or using just under a tablespoon of dough to create a thinner cookie.
