
This quick and easy salad uses all the best veggie flavors from your garden – the tomatoes, cucumbers and onion! I used little yellow tomatoes and a combination of black kiel and brandywine tomatoes.

Just slice and chop vegetables, prepare the marinade, mix all of it together and let rest in the refrigerator for at least two hours.

Enjoy the fresh tastes of summer while they are still here! Great for lunch or as a side.
Marinated Cucumber, Onion and Tomato Salad
Ingredients
- 1 cup water
- 1/2 cup distilled white vinegar
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 2 teaspoons salt
- 1 tablespoon fresh, coarsely ground black pepper
- 3 cucumbers, peeled and sliced
- 3 tomatoes, cut into wedges
- 1 onion, sliced and separated into rings.
Instructions
- Whisk the water, vinegar, oil, sugar, salt and pepper together in a large bowl until smooth.
- Add cucumbers, tomatoes and onion. Stir gently to coat.
- Cover bowl with plastic wrap. Refrigerate at least 2 hours. Enjoy!
