
Guacamole is one of my new favorite foods. It’s great for a snack or a light dinner and much healthier than my regular go to snack of sweets. Bonus points for being so easy and quick to prepare.

I used to struggle with a good way to chop my avocados but then a friend told me she simply rubs them back and forth over a grid cooling rack. Works wonderful!


Add chopped onions, tomato, garlic, salt, pepper and lime juice. Sometimes I add fresh parsley, basil or cilantro to taste. Sometimes I put all the ingredients in my blender and pulse on the chop setting for 10-15 seconds.


Guacamole is best served immediately but still tastes pretty amazing the next day. What a treat-looks good, tastes good, healthy, fast and easy to prepare. Enjoy!
Laurie’s Homemade Guacamole
Ingredients
- 2 avocados, chopped
- 1 Roma tomato, chopped
- 2 tablespoons chopped onion
- 1 teaspoon minced garlic
- 1/2 teaspoon lime juice
- 1/2 teaspoon kosher salt
- Dash freshly ground pepper
- Fresh cilantro, parsley or basil to taste
Instructions
- Mix chopped avocado, tomatoes, onions, garlic, salt, pepper and lime juice together in a bowl. Can add fresh cilantro, parsley or basil to taste.
- Can put all the ingredients in the blender and pulse on chop setting for 10-15 seconds.
- Best served immediately, but can be covered and refrigerated and served the next day.
