BRRRR! So cold out this morning! When I woke up I could hear the sleet outside. Perfect morning for a bowl of baked oatmeal. I have always loved oatmeal – especially when it is made with the old fashioned oats, but when you bake it, it is even better!
I really like the texture of the oats when they are baked. Combined with fresh blueberries, vanilla, cinnamon and sliced almonds – YUM!
Preheat your oven, prepare an 8 x 8 baking dish, and gather your ingredients.
Mix together the oats, cinnamon, baking powder and salt in one bowl. In another bowl whisk together the milk, maple syrup, melted butter, egg and vanilla.
Pour the wet ingredients into the dry ingredients and stir until combined. Gently fold in 1 cup of the blueberries.
Pour the mixture into the prepared pan. Sprinkle the remaining blueberries, chopped or sliced nuts and sanding sugar, if desired.
Bake for 40 minutes, or until the top is golden and the oatmeal is set.
Let cool for 5 minutes and serve warm. If desired, drizzle with a bit more maple syrup or milk. This reheats very nicely! Breakfast all week! Enjoy!
Blueberry Maple Baked Oatmeal
Ingredients
- 2 cups old fashioned oats
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups unsweetened vanilla almond milk (or milk of your choice)
- 1/3 cup maple syrup
- 4 tablespoons unsalted butter, melted and cooled to room temperature
- 1 large egg
- 2 teaspoons vanilla extract
- 1 1/2 cups blueberries, divided
- 1/2 cup chopped pecans, almonds, nuts of your choice, optional
- sanding sugar, optional
Instructions
- Preheat the oven to 350 degrees. Lightly spray 8 x 8 baking pan with nonstick cooking spray and set aside.
- In a large mixing bowl, mix together the oats, cinnamon, baking powder and salt.
- In a medium bowl, whisk together the milk, maple syrup, melted butter, egg and vanilla. Pour the wet ingredients over the oat mixture and stir until combined. Gently fold in 1 cup of the blueberries.
- Pour the mixture into the prepared pan. Sprinkle the remaining blueberries and nuts on top of the oats, if using. If desired, sprinkle a bit of sanding sugar over the top.
- Bake for 40 minutes, until the top is golden and the oatmeal is set. Let cool for 5 minutes and serve warm. Drizzle with a bit more maple syrup or milk, if desired.
- Refrigerate leftovers. Perfect to reheat for breakfast the rest of the week. Enjoy!
