Baked Oatmeal is just what you need on a cold winter morning!

Ingredients
2cupsold fashioned oats
2teaspoonsground cinnamon
1teaspoonbaking powder
1/2teaspoonsalt
2cupsunsweetened vanilla almond milk (or milk of your choice)
1/3cupmaple syrup
4tablespoonsunsalted butter, melted and cooled to room temperature
1largeegg
2teaspoonsvanilla extract
1 1/2cupsblueberries, divided
1/2cupchopped pecans, almonds, nuts of your choice, optional
sanding sugar, optional
Instructions
Preheat the oven to 350 degrees. Lightly spray 8 x 8 baking pan with nonstick cooking spray and set aside.
In a large mixing bowl, mix together the oats, cinnamon, baking powder and salt.
In a medium bowl, whisk together the milk, maple syrup, melted butter, egg and vanilla. Pour the wet ingredients over the oat mixture and stir until combined. Gently fold in 1 cup of the blueberries.
Pour the mixture into the prepared pan. Sprinkle the remaining blueberries and nuts on top of the oats, if using. If desired, sprinkle a bit of sanding sugar over the top.
Bake for 40 minutes, until the top is golden and the oatmeal is set. Let cool for 5 minutes and serve warm. Drizzle with a bit more maple syrup or milk, if desired.
Refrigerate leftovers. Perfect to reheat for breakfast the rest of the week. Enjoy!
