Wonderful Baked Oatmeal

Winter always brings thoughts of comfort food and baked oatmeal is the perfect breakfast comfort food – especially when the oatmeal is baked with applesauce, raspberries and blueberries. So easy and delicious!

If you haven’t tried baked oatmeal, you are in for a treat! Love the texture of this baked oatmeal recipe! Make a big batch for company brunch or to refrigerate and have instant breakfast during the week.

Gather your ingredients.
Whisk together the dry ingredients and wet ingredients separately.
Gently stir in the berries.
Bake at 350 until oatmeal is set and golden brown.
So delicious!

Baked Berry Oatmeal

Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup loosely packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup canned light coconut milk, plus more for drizzling (or milk of your choice)
  • 1/4 cup applesauce
  • 1 tablespoon unsalted butter,melted
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2/3 cup mixed berries, fresh or frozen
  • sanding sugar optional

Instructions

  • Preheat oven to 350 degrees.  Spray a small baking dish, that serves two-four, with nonstick spray.  Set aside.
    In a large bowl, whisk together the oats, brown sugar, baking powder, cinnamon and salt.  In a smaller bowl, whisk together the coconut milk, applesauce, melted butter, egg and vanilla extract.  Add the wet  ingredients to the dry and gently mix until combined.  Gently stir in the berries with a spatula. 
    Bake for 25 minutes, or until the top of the oatmeal is set and golden brown.  Allow to cool 1-2  minutes.  Place in serving bowls and add drizzle of coconut milk.  Can also top with a bit of sanding sugar, if you like.
    -Our local grocery store does not carry light coconut milk, so I use the regular coconut milk and dilute it with milk.  You can also use milk  of your choice.  Use your favorite berries or fruit – we love mixture of red raspberries and blueberries.
