
One day it is so hot you have to wait until the evening to go for a walk – and the next day it is so cold and rainy you have to bundle up to stroll around the block. This 4 Cheese Butternut Squash Pasta recipe is a perfect way to use butternut squash and herbs from your garden and turn them into a dish of warm, gooey goodness!

This recipe has not one – not two or three, but 4 different types of cheese! Look at that bubbling cheesy pasta made with ricotta, parmesan, fontina and mozzarella cheeses. The recipe calls for rigatoni pasta, but it was not available at our store, so I substituted penne.

You get the extra cheesy pasta with the creaminess of the butternut squash. And also beautiful color is added with the spinach, sun-dried tomatoes and fresh herbs (which I used instead of dried).
