Godfather Bread Has a Great Combination of Flavors – Cheese, Bacon, Onions and Peppers

Bread, cheese, bacon, onions and peppers together-hard to beat. This recipe has this great combination of flavors. Relatively easy because it uses frozen bread dough. I really like not only the convenience of purchased frozen bread dough but the taste and texture are beyond what I have been able to duplicate. I often use it for pizza dough, cinnamon twists, big sandwich and this recipe. I usually serve Godfather Bread on Sunday nights but delicious anytime and great for parties.

Fry the bacon in a skillet. When done remove from pan and saute the onions and peppers in the drippings. Red or green peppers are fine. Meanwhile whisk the eggs in a large mixing bowl; add the cheese. Cut the thawed bread dough into small pieces, about thirty pieces or so and add to the cheese mixture. Kitchen scissors work well for this. The smaller the pieces are the more goodies each bite has. Cut the bacon into small pieces and add to the large bowl with the sauteed onion and peppers.

Using your hands combine all the ingredients, trying not to “overwork” the dough. Place in a greased dish. Cover and let rise until light. Bake at 350 degrees until done. I usually cover with aluminum foil the last few minutes so the bread doesn’t get too brown before it’s done. The pictures here are for a one half recipe which fits well in a 9×9 di

Ingredients

  • 1 loaf frozen bread dough, thawed
  • 2 eggs, beaten
  • 6 strips bacon
  • 1/2 cup onions, chopped
  • 1/2 cup peppers, chopped
  • 3/4 cup mozzarella cheese, grated
  • 3/4 cup cheddar cheese, grated

Instructions

  • Whisk the eggs in a large mixing bowl. Add the cheese and the frozen bread dough which has been cut into small pieces. Fry the bacon in a skillet; when done remove from pan and saute the onion and peppers in the bacon drippings. Cut the bacon into small pieces and add to the dough mixture along with the sauteed onions and peppers. Using your hands gently combine all the ingredients until well mixed. Place in greased 9×13 pan, cover and let rise until light. Bake at 350 degrees for 35-45 minutes or until done. Cover with aluminum foil if necessary so crust will not over brown. Enjoy!

Ingredients

Bundt

  • 1 tablespoon butter
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup grated Cheddar cheese
  • 1 cup frozen Tater Tots
  • 2 cups cubed ham
  • 1 can Pillsbury Grands Flaky Layers Original Biscuits

Cheese Sauce

  • 1 tablespoon butter
  • 1 1/2 tablespoons flour
  • 1/8 teaspoon salt
  • 1 cup milk
  • 1/2 cup grated Cheddar cheese

Instructions

Bundt

  • Preheat the oven to 400°. Coat a Bundt pan with the butter.
  • In a large bowl, combine the eggs, milk, salt and pepper, and whisk until very smooth. Mix in the Cheddar cheese, then the Tater Tots and ham.
  • Open the can of biscuits and cut each one into at least 6 pieces. Separate them and put them in the egg batter individually, mixing as you go to coat the dough on all sides. Give one good final stir.
  • Pour the biscuit and egg mixture evenly into the prepared Bundt pan. Bake until golden brown on top, 45-50 minutes.
  • About 10 minutes before it's done, make the sauce.
  • Use a butter knife or small spatula to loosen the bread from the pan, then place a plate over the pan and carefully invert it so that the Brunch Bundt sits regally on the plate.

Cheese Sauce

  • In a small saucepan, melt the butter over medium heat. Whisk in the flour and salt, stirring and cooking for about 2 minutes.
  • Slowly pour in the milk and whisk until the lumps are gone. Keep stirring until it gets thicker and bubbles, 3 to 5 minutes.
  • Then stir in the Cheddar cheese just until melted and smooth. Cover and set aside, keeping the sauce warm.
  • Lightly drizzle the cheese sauce over the bread or serve it on the side. Place the rest in a small serving pitcher for people who want more cheese.

Homemade cheese bread – YUM! When you cut the loaf of cheese bread you find these lovely swirls of cheddar cheese inside.

Just look at that beautiful loaf of bread. It looks wonderful on the outside and the inside! It does take about 4 1/2 hours from start to finish, but you can make it ahead and use the overnight directions on the recipe.

You warm buttermilk and water, add yeast and sugar and let it set for 5 minutes. Add butter, egg, salt, garlic powder and 1 cup of flour. Mix. Add the rest of the flour, mix and knead. You can use your mixer or knead the dough by hand. Then you let it rise until doubled in size.

Then you punch down the dough and roll it into a 9 x 15 rectangle and sprinkle it with cheese, then roll it up, similar to making cinnamon rolls, making a 15-inch log. Cut the log in half lengthwise and twist the two halves together. Place in a loaf pan, let rise again. Brush with melted butter mixed with herbs and garlic powder and bake.

You can vary the type of cheese and the herbs, depending on what flavors you like.
