Ice Cream Delight

Ice Cream Delight

The name sums it up! This is a family favorite. I enjoyed it growing up and my family has always loved this recipe. It’s also very convenient because it is prepared ahead of time.

Combine crumbs and melted butter. Reserve some of the crumb mixture for the topping and place the rest in a 9×13 pan, cover and freeze.

Combine filling ingredients and spread over frozen crust. Freeze until hard.

After filling layer is frozen set ice cream out and let soften 30 minutes so it can be spread over the chocolate layer. Top with remaining crumbs or sprinkles or the topping of your choice. For birthdays sometimes we used frosting to decorate also.

Ingredients

  • 3 cups crushed graham crackers
  • 1/2 cup melted butter

Filling

  • 2 cups powdered sugar
  • 1/2 cup soft butter
  • 2 oz chocolate
  • 2 egg yolk
  • 1 tsp vanilla
  • 2 egg whites, beaten stiff

Ice Cream Layer

  • 2 quarts vanilla ice cream, softened

Instructions

  • Combine crumbs and melted butter and place in 9×13 pan reserving some crumbs for the topping if desired. Cover and freeze.
    Beat the egg whites until stiff and combine with other filling ingredients. Spread over crumb layer and freeze until hard.
    Soften ice cream and spread over chocolate layer, top with crumbs or any topping you prefer. Cover and freeze.

Notes

It is much easier to spread the ice cream if the chocolate layer is completely frozen and the ice cream softened. This is not a time to speed up the process. 
The original recipe I had included nuts and coconut but I prefer it without.
Using sprinkles or frosting to decorate or any topping you like makes this a very versatile, delicious dessert.
