Perfect Weather to Bake Pumpkin Doughnuts!

The last few weeks I have seen these Baked Pumpkin Doughnuts from Sally’s Baking Addiction blog posted over and over by different people. So I had to bake them! They looked so good! Pumpkin doughnuts with fall spices and topped with a brown sugar icing.

Fresh pumpkin doughnuts with brown sugar icing – Perfect for fall breakfast or snacking!

Very easy recipe. Whisk the dry ingredients. Whisk the brown sugar with the wet ingredients. Pour together and mix just until combined.

Place the batter in a large zipped-top bag. Cut a corner off the bottom of the bag and pipe the batter into each sprayed doughnut cup, filling about halfway.

Bake about 10 minutes, or until lightly browned. You could eat them right out of the oven….but wait…until you make the icing.

Make the brown sugar icing and then dip the tops of the doughnuts into the warm icing….oh my…makes your kitchen smell so delicious! Place on a wire rack to set. The icing sets fast, so if you want to add sprinkles, nuts or toppings have them ready to go. The icing will set in about an hour.

These are the perfect pumpkin doughnut! Now I know why so many people were posting these! Absolutely amazing! A recipe to add to your favorite fall treats!

So fun! Top with sprinkles, chopped nuts, or your favorite decorations.

This icing sets up, so about an hour after you put on the icing, they are ready to stack and transport. Cover and store doughnuts for 1-2 days or in the refrigerator for up to 1 week. This would be a fun Halloween treat – add a cup of warm apple cider – and you could call it dinner! (Well you might not – but I might!)

Spooky Treats to Make for Halloween

Halloween is almost here! We had the “kids” here this weekend so I decided to make some fun spider treats. These Black Widow Peanut Butter Bars from the Half-Baked Harvest blog were so delectable and just so darn cute!

So easy and so fun to make! The cookies start with a peanut butter bar base (no mixer required). Once baked, you top the cookies with creamy peanut butter – which melts into the base. Once that has set, you add a layer of rich and fudgy chocolate frosting. This would be a party worthy treat! To create the spider web, you melt marshmallows and then pull them in different directions over the frosting.

Can spiders be adorable? These “not so itsy bitsy spiders” are fun to make. Melt chocolate (I used chocolate wafers) and then pipe two dots on parchment paper. Put a chocolate whopper on each dot. Then draw legs on each side with the chocolate, and sprinkle with edible glitter or sprinkles. Use melted chocolate or frosting to attach the eyes. Place the tray in the freezer for about 15 minutes to harden. Then just peel the spiders off and place on their web.

Just too cute! Next time I would have the technique down a little better, but experimenting is half the fun.

Super simple spiders! Just stick pretzel sticks into Oreo cookies and top with candy eyes. Candy eyes make everything more fun!

Fall Sugar Cookies

October is here and cooler weather has arrived! Time to start thinking about fall and Halloween cookies. In her cookbook, “Sally’s Cookie Addiction”, Sally McKenney shares her Pumpkin Spice Sugar Cookie recipe. It is like her recipe in the link below, except that you whisk 1 1/2 teaspoons of pumpkin pie spice and 1/2 teaspoon of cinnamon into the flour mixture at the beginning of the recipe.

This is a wonderful fall-flavored sugar cookie! Decorate with traditional buttercream, a glaze, or royal icing.

An easy way to decorate cookies is to use edible wafer paper. The Fancy Flours website has so many to choose from – for every season and holiday.

You start by making your sugar cookies (I used the Pumpkin Spice Sugar Cookie recipe). Make Royal Icing and color to complement your wafer paper. Frost cookies and allow to dry completely. Cut out designs.

Use a light corn syrup to “glue” the wafer paper design to the cookies. Use a small craft brush and coat the entire back with corn syrup. Make sure the cover the edges really well. Wiggle the design in place and press down the edges. Go around the cookie several times, making sure all the edges are “glued” down. Gently smooth top with paper towel and smooth wafer paper one more time.

Turn the cookies over on a piece of wax paper and let set for 10 minutes. Turn cookies back over and allow to dry completely.

How fun are these? Once dry, you could pipe a border or add other decorations.

Using three colors of royal icing you can create beautiful autumn leaves. Pipe one color along the outside border for about 1/2 inch, pipe second color inside it, and third color in the center. Use a toothpick to “pull” color out from the center to main points, the using same toothpick “pull” color from outside edge in between each of the previous lines. Swirling fall leaves are a fun project for kids – everyone can do this.

Add 2-3 drops of food coloring to a small bowl of your icing, then drag a toothpick through it to make swirls. Dip the top side of the cookie in the frosting and let the excess drip off, let it dry on cooking rack.

You can also make fun polka dots by applying dots of second color to base color while it is still wet.

Use you favorite sugar cookie and frosting recipes for fall. Can add cinnamon or pumpkin pie spices to your cookie dough to give it a fall flavor. Try adding a bit of maple syrup to you icing.
