Time to Bake Christmas Cookies!

Christmas is such a special time of the year, and baking is a big part of the festivities! Adding Christmas sprinkles makes all cookies more special!

These are Cake Batter Chocolate Chip Cookies from Sally’s Baking Blog. They are a cross between chocolate chip cookies and a funfetti cake. You actually use the dry cake batter mix in the dough.

Holiday sprinkles are added to the dough, along with the white chocolate and semi-sweet chocolate chips. After the holidays use the sprinkles that reflect the current holiday or special occasion. You could also use the birthday boy or girl’s favorite colors.

Look at that cookie – like Christmas on the cookie tray! I added a few more chocolate chips and holiday sprinkles to the top of the cookies right after I popped them out of the oven.

Banana Chocolate Chip Muffins with Cinnamon Streusel

Banana Chocolate Chip Muffins with Cinnamon Streusel

One of the great things about a banana muffin is that you can tell yourself that it is really healthy! Even if it does have chocolate chips, walnuts and sugar in it! No guilt means happier snacking! These are super moist and have so much flavor.

You start by making the streusel. Mix together cinnamon, brown sugar, chocolate chips and walnuts (optional).

Mix up your batter. Line your muffin tins and place about 1 tablespoon of batter into each muffin cup. Sprinkle with streusel.

Layer another spoonful of batter on top and layer with more streusel. Continue to layer batter and streusel into each muffin tin, ending with streusel layer.

Top with any remaining streusel. Then I sprinkle a bit of sanding sugar on top.

Bake for about 20 minutes, allow to cool for 5 minutes in the muffin tin, then transfer to wire rack to complete cooling. Doesn’t it look delicious?

Happy New Year!!! One more day to eat cookies…before your resolution to eat healthier starts! Do you have sprinkles and chips left over from your holiday baking? Here are two recipes that you could make to celebrate the new year!

I often post recipes from Sally’s Baking Addiction and her Cake Baker Chocolate Chip Cookies will not disappoint. These soft chocolate chip cookies are made “ready to party” with the addition of sprinkles. The Chocolate Crinkle Sprinkle Cookies are from The Pretty Dish cookbook by Jessica Merchant-they are fudgy, chewy, rich and gooey! Use different sprinkles for different holidays or celebrations. Delicious cookie recipes to add to your collection.

For the Cake Batter Chocolate Chip Cookies, you start by creaming the butter and sugars, add the egg, add vanilla, add sifted dry ingredients, stirring just to combine.

Add the sprinkles and chocolate chips, a combination of white and semi-sweet chocolate chips make really pretty cookies. Cover and chill dough.

Preheat oven to 350 degrees and roll the dough into balls, shape cookie dough balls to be “taller” more than wide. Bake 10-12 minutes.

Once baked, press a few more chips into the tops of the cookies.
