Banana Bundt Bread with Cinnamon Streusel – A New Twist on a Classic Favorite

Banana Bread made in a Bundt pan? What a clever idea! This would be perfect for breakfast on Christmas morning! You could make it a day or two ahead of time and warm up individual servings in the microwave. It always seems to me that banana bread tastes even better on the second and third day. The cinnamon streusel on the top is like an extra holiday gift!

This recipe is easy to make. You mix up the streusel in one bowl and set aside. With a mixer, blend the liquid ingredients together, then slowly add the combined dry ingredients. Pour into a prepared Bundt pan and into the oven it goes. Bake for 20 minutes, sprinkle with the cinnamon streusel, then bake for about another 50 minutes.

A simple, classic banana bread recipe that is so moist and delicious! The Bundt shape makes it festive for the holidays.

Banana bread can be eaten warm or at room temperature. But my favorite way to eat banana bread is toasted – with a bit of softened butter or drizzled with honey.

Doesn’t that look good? The wonderful banana flavor, moist texture and crunchy cinnamon streusel combine to make a very scrumptious snack. Enjoy!!!

Have you tried recipes using brown butter yet? Browning your butter makes your quick breads, cookies and muffins even better! It adds a deep caramel, brown sugar type flavor. Amazing!

This recipe combines the brown butter, cinnamon, dark brown sugar, buttermilk, vanilla and pecans for a fantastic, moist banana bread.

Sprinkle some nuts and turbinado sugar on top, or some cinnamon and sugar, right before baking for a pretty top on your quick bread.

As soon as it is cool enough to slice – but warm enough to still melt your butter – it is time to try a slice!

My favorite way to eat banana bread is toasted. Love that little extra crunch, delicious toasted with just butter or with peanut butter. Just think…warm banana bread with gooey peanut butter on top. Wow! You just have to try it to know how good it is.

Is it a muffin or cupcake? If you want it to “sound” healthier, call it a muffin. If you feel more like a dessert, call it a cupcake. Whatever you decide, you will love the mixture of chocolate and banana!

Start by peeling 3-4 ripe bananas and placing them in a gallon ziplock bag. Close bag, remove excess air and seal.

Use your fingers to mash the bananas until they are smooth. This method lets you see and feel any lumps that you need to work out.

Following the recipe, mix the ingredients in a medium bowl.

Spray muffin tins or use liners. Divide up batter equally into about 12-18 muffins. Sprinkle decorating sugar and chocolate sprinkles on top, if desired.

Bake at 350 degrees for about 20-25 minutes.

Let cool a few minutes. Delicious warm or at room temperature.

A muffin for breakfast or a tasty afternoon snack. Enjoy!

Ingredients

  • 3-4 mashed ripe bananas (need 1 cup)
  • 1 egg
  • 1 cup sugar
  • 1/2 cup salad oil
  • 1 teaspoon vanilla
  • 1 2/3 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon water
  • 1 cup chocolate chips
  • Decorating Sugar, optional
  • Chocolate Sprinkles, optional

Instructions

  • Preheat oven to 350 degrees and prepare muffin tin with vegetable oil spray, or use cupcake liners.
  • Peel ripe bananas and place in gallon ziplock bag. Smash with fingers until smooth. Set aside.
  • In medium bowl, beat egg with fork. Add sugar and oil, stir to combine. Add mashed bananas and vanilla. Stir.
  • Add flour, salt, baking soda and water; stir gently to just combine.
  • Gently fold in chocolate chips.
  • Divide equally in muffin tins, about 18 muffins. Decorate tops with decorating sugar and chocolate sprinkles, if desired.
  • Bake 20-25 minutes. Enjoy!
