We like to watch the Great British Baking Show and we noticed that they often use Golden Syrup in their desserts, so we ordered some to try. It is the base for this Golden Syrup Microwave Mug Cake recipe.
This recipe takes less than 10 minutes from start to finish, so it is a great snack to make when you are hungry for a baked snack, but don’t want to wait 30 minutes. Plus – it is light, sweet and delicious!
So easy to make! You melt the butter in a bowl. In another bowl, use a fork to lightly whisk the egg, then whisk in the golden syrup, milk and vanilla.
Add the flour and whisk until smooth, add the melted butter and whisk to combine. The recipe has you divide the mixture between two 1 1/2 cup mugs….but since I was the only one at home, I put the mixture in one large mug. Microwave on high for 1 minute and 20 seconds or until puffed and just firm when lightly touched.
I probably should have put it in a bit larger mug – but an overflowing dessert is not a bad thing!
Top with a bit of vanilla bean ice cream and then drizzle a little extra golden syrup on top to serve. YUM!
This has a moist and light texture and such a wonderful flavor! Mug cakes are perfect when you want a quick warm snack.
The recipe and instructions are in the link below. If you don’t have self-rising flour, you can make your own, using 1 teaspoon of baking soda for each 1/2 cup flour. You can also use maple syrup or honey instead of the golden syrup. Check you mug cake for doneness after 1 minute, if you cook it too long, it will be dry. My larger mug was done at 1 minute, 30 seconds.
