5 Minute Chocolate Chunk Banana Bread Mug Cake

BRRRR! Need a quick chocolate fix after working or playing outside? This 5 minute chocolate chunk banana bread mug cake might be your answer! Mix up the ingredients in a small bowl, pour into mug and bake in the microwave for about 1 1/2 minutes. How easy is that?

You just mash an overripe banana, sweeten it with some honey or maple syrup. Add basic ingredients – coconut oil (I used vegetable oil) egg, vanilla, flour, baking soda, cinnamon and salt. Fold in chunks of your favorite chocolate bar or chocolate chips. Done! I added a few chocolate chips on top to make it pretty and because more chocolate is always the right topping! You could also top with coarse sugar or a cinnamon-sugar mixture.

Try this if you want something sweet and quick! It could be for breakfast, an afternoon snack or late-night dessert. Enjoy this fun and easy bread mug cake!

Ingredients

Cake

  • 1/4 cup + 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup milk, at room temperature
  • 2 tablespoons salted butter, melted and cooled
  • 1/2 teaspoon vanilla

Layering and Topping

  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon
  • coarse sugar or turbinado sugar, optional

Instructions

  • Mix sugar and cinnamon together and set aside.

Cake

  • In a small bowl, whisk together flour, sugar, baking powder and cinnamon. Blend in milk, butter and vanilla until the batter is smooth. Into a 10-ounce microwave-safe mug scoop about 1/3 of the dough in the bottom of the mug. Sprinkle a spoonful of sugar over the dough. Repeat the layering two more times, ending with the cinnamon and sugar on top. Add a sprinkling of coarse sugar or turbinado on top, if desired.
  • Microwave on high 1-2 minutes, or until the cake is done. Let cool for just a few minutes – the cake is best enjoyed shortly after it is cooked.

  • 4 tablespoons flour
  • 4 tablespoons sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons oil
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract
  • 1 dash salt
  • 1/4 teaspoon expresso powder, optional

Instructions

  • Mix all ingredients in a mug and microwave on high for 40 seconds.  This makes a gooey brownie,microwave a little longer for a set brownie.  Enjoy!
