Ingredients

1/4 cup + 2 tablespoonsall-purpose flour
2tablespoonssugar
1/2teaspoonbaking powder
1/2teaspooncinnamon
1/4cupmilk, at room temperature
2tablespoonssalted butter, melted and cooled
1/2teaspoonvanilla

1/4teaspooncinnamon
coarse sugar or turbinado sugar, optional

Mix sugar and cinnamon together and set aside.
Cake
In a small bowl, whisk together flour, sugar, baking powder and cinnamon. Blend in milk, butter and vanilla until the batter is smooth. Into a 10-ounce microwave-safe mug scoop about 1/3 of the dough in the bottom of the mug. Sprinkle a spoonful of sugar over the dough. Repeat the layering two more times, ending with the cinnamon and sugar on top. Add a sprinkling of coarse sugar or turbinado on top, if desired.
Microwave on high 1-2 minutes, or until the cake is done. Let cool for just a few minutes - the cake is best enjoyed shortly after it is cooked.
