
BRRR! It is so cold today. We really need warm soup on days like these and Taco Soup is super easy to make – like making tacos, but easier!
This is a hearty and filling soup! Change the ingredients and toppings to please your family. Wishing you a warm and cozy day!
Taco Soup
Tasty easy soup to serve on a cold day!
Ingredients
- 1 medium onion
- 1 tablespoon olive oil
- 2 pounds ground beef
- 1 pkg taco seasoning
- 2 cans tomato soup
- 2 cans crushed tomatoes with oregano and garlic
- 2 cans whole kernel corn, undrained
- 2 cans pinto beans with jalapenos, undrained
- Optional toppings: sour cream, shredded cheese, tortilla strips or chips, sliced scallions
Instructions
- Dice the onion and brown in olive oil over medium high heat in skillet.
- Add ground beef to onion and brown, stirring occasionally.
- Add remaining ingredients, stir. Bring to a boil. Simmer 5-10 minutes, stirring as needed.
- Spoon into bowls and add your favorite taco toppings. Enjoy!
Notes
This makes a big batch, so I normally make 1/2 of the recipe for our family. Sometimes our local store does not carry the pinto beans with jalapenos, so feel free to substitute with your favorite beans and adjust with seasonings for more or less heat.
