Dice the onion and brown in olive oil over medium high heat in skillet.
Add ground beef to onion and brown, stirring occasionally.
Add remaining ingredients, stir. Bring to a boil. Simmer 5-10 minutes, stirring as needed.
Spoon into bowls and add your favorite taco toppings. Enjoy!
Notes
This makes a big batch, so I normally make 1/2 of the recipe for our family. Sometimes our local store does not carry the pinto beans with jalapenos, so feel free to substitute with your favorite beans and adjust with seasonings for more or less heat.
