
Need a snack – but don’t want to spend 30 minutes baking a treat? Individual sized mug cakes could be your answer! They only take about 5 minutes to mix up and about 1-2 minutes to cook…and you can adjust the ingredients in the recipe so that you will love it!

You just need to whisk the dry ingredients together, blend in wet ingredients and layer the cake dough with the cinnamon and sugar. You can also add coarse or turbinado sugar on top for a nice crunch. Bake in the microwave about 1-2 minutes.

Snickerdoodle Mug Cake
Ingredients
Cake
- 1/4 cup + 2 tablespoons all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup milk, at room temperature
- 2 tablespoons salted butter, melted and cooled
- 1/2 teaspoon vanilla
Layering and Topping
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
- coarse sugar or turbinado sugar, optional

- Mix sugar and cinnamon together and set aside.
Cake
- In a small bowl, whisk together flour, sugar, baking powder and cinnamon. Blend in milk, butter and vanilla until the batter is smooth. Into a 10-ounce microwave-safe mug scoop about 1/3 of the dough in the bottom of the mug. Sprinkle a spoonful of sugar over the dough. Repeat the layering two more times, ending with the cinnamon and sugar on top. Add a sprinkling of coarse sugar or turbinado on top, if desired.
- Microwave on high 1-2 minutes, or until the cake is done. Let cool for just a few minutes – the cake is best enjoyed shortly after it is cooked.
