Oatmeal Fudge Bars

One of our goals of this blog was to gather together favorite family recipes. As I was looking through my recipes I found that most my favorites fell into three main categories – comfort food, breads and desserts! I have always had a sweet tooth and love baking – especially when it involves chocolate.

Oatmeal Fudge Bars – So good with glass of milk!

We have been making Oatmeal Fudge Bars for about fifteen years – probably my most requested recipe by the volleyball team girls. We took them to many a team dinner, weekend tournaments, and fun outings. The chocolate fudge between the oatmeal layers is so wonderful….it is especially good when you warm up your cookie for about 10 seconds in the microwave – just enough to make the chocolate melt just a little. YUM!

Cream sugars and butter, add eggs.
Add flour, salt and baking soda. Mix until smooth.
Add the oatmeal and mix well.
After mixing in the oatmeal, the dough will look like this.
Melt chocolate chips, sweetened condensed milk and butter in a small bowl in the microwave.
Put 2/3 of the oatmeal mixture in the prepared 9 x 13 pan and spread out,
patting down with fingers to smooth out.
Pour melted chocolate mixture over oatmeal layer.
Crumble remaining 1/3 of oatmeal mixture over the chocolate layer with your fingers.
Bake about 25-30 minutes….oh so good. Top will be slightly browned.
Let cool and cut into bars – you will love them!

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups quick oatmeal
  • 1 cup chocolate chips
  • 1 can Eagle sweetened condensed milk
  • 1/2 cup butter

Instructions

  • Preheat the oven to 350 degrees.  Lightly spray 9 x 13 pan with vegetable oil spray, set aside.
  • Mix together the sugars and 1 cup softened butter with mixer, mix until smooth.  Add the eggs, mix.  Add flour, salt and soda.  Mix until these ingredients are smooth.
  • Add the oatmeal and mix until blended together.
  • In a small bowl, mix together the chocolate chips, sweetened condensed milk and 1/2 cup butter.  Microwave on high until melted, 1-2 minutes.  Stir together until blended.  
  • Put 2/3 of the oatmeal mixture in prepared 9 x 13 pan and even out.  Cover with the chocolate mixture and spread evenly.  Crumble the remainder of the oatmeal mixture with fingers and place on top of chocolate layer. 
  • Bake at 350 degrees for 25-30 minutes.
