Grilling season is here! Grilling the main dish, inside or out, makes an easy meal! Marinating the chicken breasts makes them tender and so flavorful.
Gather your ingredients -chicken breasts, olive oil, lemon, garlic, thyme, salt and pepper. Trim fat off of chicken breasts.
Place all the ingredients, except for the chicken breasts, in a gallon zip-lock bag and mix together. (Can also whisk together in a bowl, and then put in the bag, if that is easier.)
Add the chicken breasts to the bag. Marinate for at least 3 hours or overnight in the refrigerator.
Preheat your grill to medium or medium high. Place chicken breasts on the grill. Cook 8 minutes and flip. When done, remove and place on a platter, and cover with foil, until ready to eat.
Garnish with extra thyme sprigs and lemon slices. Enjoy!
Grilled Lemon Thyme Chicken
Ingredients
- 4 chicken breasts, trimmed of fat
- 3 tablespoons olive oil
- 1 lemon, zest and juice
- 3 cloves garlic, chopped
- 5 sprigs thyme or lemon thyme, leaves removed
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Place olive oil, lemon juice, lemon zest, garlic, thyme, salt and pepper in gallon zip-lock bag. Lock top and mix thoroughly.
- Place chicken breasts in zip-lock bag with marinade. Place in a bowl, to prevent leakage, and place in the refrigerator for a least 3 hours or overnight.
- When ready to cook, preheat grill to medium or medium high, depending on power of your grill.
- Place chicken breasts on the grill, cook 8 minutes on one side, then flip. When the temperature reaches 165°, remove the chicken and place on a plate, cover with foil until ready to serve.
- Garnish with extra sprigs of thyme or slices of lemon. Enjoy!
