Ingredients
4chicken breasts, trimmed of fat
3tablespoonsolive oil
1lemon, zest and juice
3clovesgarlic, chopped
5sprigsthyme or lemon thyme, leaves removed
1teaspoonsalt
1/2teaspoonpepper
Instructions
Place olive oil, lemon juice, lemon zest, garlic, thyme, salt and pepper in gallon zip-lock bag. Lock top and mix thoroughly.
Place chicken breasts in zip-lock bag with marinade. Place in a bowl, to prevent leakage, and place in the refrigerator for a least 3 hours or overnight.
When ready to cook, preheat grill to medium or medium high, depending on power of your grill.
Place chicken breasts on the grill, cook 8 minutes on one side, then flip. When the temperature reaches 165°, remove the chicken and place on a plate, cover with foil until ready to serve.
Garnish with extra sprigs of thyme or slices of lemon. Enjoy!
