
Have you tried Cap’n Crunch chicken? When we were on vacation when our kids were small, we stopped at a Planet Hollywood restaurant and had their Cap’n Crunch Chicken – it was amazing! I had always liked Cap’n Crunch, but had never thought about using it to bread chicken. It makes your chicken so crunchy and yummy!

You need to start by crushing the cereal. Place the cereal in a gallon bag and use a rolling pin to crush it. Crush most of it so that it is about the consistency of bread crumbs, but leave a few larger pieces. You could also do this step in a food processor. Transfer crumbs to a shallow dish.

Cut the chicken breasts into thin strips or bite size nuggets. Season with salt and pepper. Beat the eggs in a shallow dish, like a pie pan.

Line a baking sheet with parchment paper or silicone mat, then top with a wire baking rack. Dip each piece of chicken in the egg, then into the crushed cereal. Press the crumbs into the chicken and place on the wire rack. Sprinkle with any remaining crumbs.

Bake for 15 minutes at 450 degrees. Serve with a sweet honey mustard sauce and enjoy!
Cap’n Crunch Chicken
Ingredients
- 2 cups Cap'n Crunch cereal
- 2 chicken breasts
- salt and pepper
- 2 eggs
- honey mustard sauce for dipping, optional
Instructions
- Place cereal in a gallon zip-lock bag and crush with rolling pin, to about the consistency of bread crumbs, leaving a few bigger chunks. Could also use the food processor for this step.
- Cut the chicken into thin strips or bite size nuggets. Season with salt and pepper.
- Preheat the oven to 450°. Line a baking sheet with parchment or silicone mat and top with a wire baking rack.
- Dip each piece of chicken into the egg, then into the bread crumbs. Press the crumbs into the chicken pieces and place on the baking rack. You can sprinkle any left over crumbs onto the chicken.
- Bake for 15 minutes at 450°, until crispy and starting to brown. Serve with honey mustard, if desired.
