Beautiful Spring Cookies

Top your favorite sugar cookie with edible flowers and chopped pistachios for a beautiful spring cookie.

I love this time of year! Little Johnny Jump Ups and pansies greet us in stores -which I can’t resist!  I brought some home and planted them in the pots by our front door. As I was looking through magazines this week, I saw a photo that combined these spring flowers and cookies….so of course, I had to try making them. They turned out so pretty. Use your favorite cookie recipe, or the recipe below.

Combine flour, baking powder and nutmeg in one bowl.
Cut butter into flour mixture with pastry blender.
Beat egg thoroughly. Pour in dry ingredients and mix well.
Mix well, wrap in plastic wrap and chill in refrigerator for at least 30 minutes.
Lightly dust parchment paper with combination of flour and powdered sugar. Place dough between two sheets of parchment paper to roll out.
Roll out about 1/8 inch thick.
Cut out shapes and gently move to baking sheet.
Bake and let cool completely before frosting.
Frost cookies and sprinkle with edible flowers and chopped pistachios.
Pretty on any table!
