Can you believe it is the last week of October…and that Halloween is this Saturday? The snow this morning did shock us into realizing that fall is fading away and that winter is sneaking up on us! Time just seems to fly by! Have fun…
Did you know that you can make your own Nutter Butter cookies? Tastes even better – and definitely more healthy than the ones you buy in the store!
These cookies are simple to make and would be a fun family project. Another no chilling required recipe, so you can make these in about 30 minutes from start to finish. Just look at that creamy peanut butter filling!
You simply roll the dough in balls, halve each ball and push the two halves together. Flatten and then make a crosshatch pattern on each half with a fork. Bake and allow to cool. Mix up the filling and spread on one cookie, top with another cookie. Freeze for about 10 minutes before dipping in dark chocolate.
If desired, you can dip each cookie into melted dark chocolate.
Add a sprinkling of flaky sea salt, if desired. Let set to harden, or pop in the refrigerator for a few minutes to get a quick set, then ready to eat and share!

Note: I used 1 tablespoon of dough per cookie, as the recipe recommended. They were delicious, but I thought they were a bit thick. I would suggest flattening the cookies a bit more, or using just under a tablespoon of dough to create a thinner cookie.
October is here and cooler weather has arrived! Time to start thinking about fall and Halloween cookies. In her cookbook, “Sally’s Cookie Addiction”, Sally McKenney shares her Pumpkin Spice Sugar Cookie recipe. It is like her recipe in the link below, except that you whisk…
Pumpkin Snickerdoodles – your favorite Snickerdoodle cookie packed with pumpkin flavor and fall spices. Just look at that texture – soft and chewy – so good! I used the Cook’s Illustrated Snickerdoodle recipe, but added pumpkin and fall spices to dough. With the addition of…
Iced Oatmeal Cookies – I always like the iced oatmeal cookies that I bought at the store, but I never thought about making them! A perfect way to start fall baking – oatmeal cookies with cinnamon and nutmeg!
The keys to making these cookies is to chill your dough for at least an hour and to keep your icing very thick. You just lightly dip the tops of the cookies in the icing…..so good!
These will stay fresh covered at room temperature for 3 days or in the refrigerator for up to 10 days….who are we kidding? Gone in one day!
Make a batch and share! Perfect with a cup of tea or glass of milk. Enjoy!

My little neighbor girls wanted to come over and bake cookies at our house, so I gathered together recipes, cookie ingredients, cookie cutters…and lots and lots of sprinkles! We made Animal Cracker cookies first. The little Animal Cracker cookie cutters are so cute! They liked…
Look at that jumbo muffin!!! And since it is called a “muffin” – you can eat it for breakfast – right? Or warm it up and top with ice cream for dessert after dinner. If you love chocolate, you will want to make these.
But wait – there is more! When I was buying groceries last week, I noticed a new flavor of chocolate chips in the baking aisle – chocolate chips flavored with espresso! So into the cart they went.
They are delicious! If you like coffee and chocolate combined, you will want to try these new chips in your favorite chocolate chip recipe.
My youngest son has a birthday this week, so I decided to make these into birthday treats to share with him. I added a few sprinkles and a candle to one of the muffins to turn it into a birthday muffin. I know he eats much more healthier than I do, but a muffin is better than cake -right? Plus it is much easier to share on the go.
This recipe makes 6 jumbo muffins or 12 regular sized muffins. The recipe calls for 2 1/2 cups chocolate chips. The package has 2 cups of chips, so I mixed 1 1/2 cups of the espresso chips, along with 1/2 cup of dark chocolate chips into the batter and then sprinkled the remaining 1/2 cup espresso chips on the top. YUM!
Even graduate students need treats from their Moms! Enjoy and Share!

Rice Krispie treats are always a crowd favorite! Using marshmallow fluff makes them even easier and quicker to make. I thought it would be fun to make individual sized treats, so I used a lightly sprayed muffin tin to shape the treats. Then I added…
