Don’t these honey gingerbread cookies look delicious? They are perfect with a cup of holiday tea or morning coffee.

Years ago, when I worked for University Extension, the home economists in the Green Hills area worked together to put on Holiday Array programs (the “Pinterest” of the day). This is one of the recipes that Laverne Owens demonstrated one year. It became one of our family’s holiday cookie traditions.

They are a tasty addition to your Christmas cookie trays. You could also add cinnamon candies to decorate them right before baking or frost after baking.

Start by sifting or whisking the dry ingredients together in to a mixing bowl.

Cut the butter into pieces and add to flour mixture.

Use a pastry blender or your fingertips to work the butter into the flour.

Add the honey and mix until well blended.

Divide the dough in half. Take half the dough and press together into a rectangle. Place it between two pieces of parchment paper and roll it out about 1/8-1/4″ thick.

Dip gingerbread cookie cutters in flour and cut out cookies.

Sometimes it helps to gently slide a small spatula under the cookies to separate the cookies, then gently pull off extra dough before transferring to baking sheets.

Place on baking sheet lined with parchment paper or silicone mat.

If you want, you can sprinkle sanding sugar on top before baking. Bake 12-15 minutes until lightly browned. Cool on baking sheet for 1-2 minutes, then finish cooling on cooling trays.

Ingredients

  • 1/2 cup sugar
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons powdered ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 pound butter, cut into small pieces
  • 1/2 cup honey

Instructions

  • Preheat oven to 350 degrees. Sift the sugar, flour, soda, ginger, cinnamon, cloves and nutmeg together in a mixing bowl (or whisk together if you don't have a sifter).
  • Using a pastry blender or your finger tips, mix the butter into the dry ingredients until mixture until blended together.
  • Add the honey and stir with spoon or mixer until all ingredients are blended together.
  • Gather up dough into a ball and divide in half. Take half of the dough and press together and flatten slightly into a rectangle. Place dough between two pieces of parchment paper and roll out about 1/8" thick. Cut out with gingerbread people or houses.
  • Place cut out cookies on a cookie sheet, lined with parchment paper or silicone mat, and bake 12-15 at 350 degrees.
  • Remove from oven, and cool on baking sheet 1-2 minutes, then continue cooling on a cooling rack.

Beautiful Christmas Cookies – The Easy Way

Christmas is almost here! We are just starting our holiday baking! I love to bake cookies, but I am not very good at detailed decorating – so I like to use the edible wafer papers from Fancy Flours on Christmas cookies.

Bake your favorite Christmas cookie, frost with royal icing and let it dry overnight. I have tried “cheating” – but if the icing is not completely dry, the wafers do not lay flat and they will curl at the edges.

Once the icing is dry, cut your wafer paper images to the size you want and trim the edges. I use light corn syrup as a “glue” because it dries clear. Using a small craft brush, coat the entire back of the image with corn syrup. Make sure you get all the edges covered and avoid getting the corn syrup on the right side of the image.

Gently place the image on the cookie and adjust to position you want. Press down on all the edges until they stay put and are “glued” down.

Place a paper towel over the cookie and gently smooth the image one more time. Turn the cookie over on a piece of wax paper and let it set for about 10 minutes. Turn cookie back over and allow to dry completely.

Once the cookie is dry, you can add borders or sprinkle with glitter.

You can create beautiful cookies so easily!
