Embrace Summer with Lavender Lemon Sugar Cookies

Lavender Lemon Sugar Cookies are so dainty and pretty! Summer in a cookie! Plus they are simple to make and delicious to eat!

If you have lavender in your garden, you can use it to make the lavender sugar. You can dehydrate the buds in a dehydrator, or to make it easy, use your microwave. Place stems of lavender on a paper towel and microwave on high for about 1 1/2 minutes. When the buds are brittle, they are ready to use.

Cream the butter, lavender sugar and vanilla. Add the flour and salt. Combine to form a ball. Roll between two sheets of floured parchment and cut out the cookies, using a 3 inch circle cookie cutter. Place in freezer for about 10 minutes.

Brush each cookie with beaten egg white, then sprinkle with lavender sugar. You can also add a bit of coarse sugar to the top, if desired.

If using edible flowers to make extra fancy, gently push them into each cookie to adhere. Bake until the cookies are lightly golden brown. These are flowers from our garden that I dried using a microwave flower press.

I love gardening, flowers and baking…so these recipe involves all of those in one project. These buttery shortbread cookies are amazing -with hints of lavender and lemon in each one.

You could also top with fresh edible flowers – like pansies -to serve.

Looks like a tray of cookies just waiting for a tea party!

Be Creative and Make Some Pansy Topped Shortbread Cookies

Pansies are a sure sign that spring is here! I love all the pretty colors! They are a fun flower to bake with and make crafts with. These shortbread cookies are easy to make. You combine butter and sugar in a food processor, then add flour and vanilla and pulse until the dough comes together. Chill the dough, roll out and cut out rounds with a cookie cutter. You can vary the size, depending on the size of your pansies.

While the dough is chilling, prepare your pansies. Cut off the stem and place them on a large sheet of parchment paper.

Place another sheet of parchment paper over the top of the pansies.

Weigh the pansies down, I topped them with a baking sheet and cook books. Let them set at least 30 minutes.

Bake the shortbread cookies for about 7-10 minutes. Remove from the oven and gently press the flat pansies on the hot cookies.

Sprinkle with granulated or sparkling sugar.

What a pretty bunch!

I like the smaller pansies better. The pansies are edible, but I think they may be more of a decoration for most people. But everyone will like the rich shortbread cookies!

Easter season is almost here! Get out your spring cookie cutters and start having fun!

Bake some sugar cookies, whip us some frosting and get out all your edible glitter, sparkling sugars, googly eyes, bows, and other fun Easter edibles.

The sugar cookie recipe below is the best one I have found. After you mix it up you roll it out on parchment paper or mats, refrigerate the rolled out dough for 1-2 hours and then cut out your cookies. So much easier to cut the cookies out than the traditional method of chilling the dough and then trying to roll it out.

I have experimented with several different royal icing recipes and the one below is the most simple and best tasting one I have found. I have learned, if in doubt, try Sally’s Baking Addiction blog for baking recipes. She also has a really good icing glaze recipe, that would be easier if you are decorating Easter cookies with kids. I put the frosting in little squeeze bottles – so much easier than piping bags.

These little bunnies are cute just with frosting and sparkling sugar. So fun and easy for kids to make.
