Sugar Cookie Cake with Valentine M&Ms

Sugar Cookie Cake with Valentine M&Ms

Valentine’s Day is coming soon! This would be a fun family dessert to make to celebrate. It tastes like a sugar cookie, but is the thickness of a cake. The outside edge is crispy and the inside has the texture of a sugar cookie. Great…

Monster Cookies – YUM!

Monster Cookies – YUM!

One of my cousins asked if we would post the Monster Cookie recipe that we used to make as kids. I hadn’t made them for a long time – but I remembered that they were so good – fun memories always make the food taste better – especially cookies!

This is the original recipe that I wrote out in early 80’s. The measurements in parenthesis are for half batch of the recipe – which still makes 140 cookies! The recipe below makes about 3 dozen – but if you are having a big party, you might want the full batch!
Ingredients for cookies.
The oatmeal base is delicious. We use chocolate chips, M&M’s, and chopped walnuts –
but you can be creative and add your favorites.
Cream butters and sugars, add eggs and oatmeal.
Cream softened butter, peanut butter, brown sugar and white sugar. Add eggs, mix.
Add vanilla and baking powder. Mix.
Add ins.
Add about 3 cups of your favorite chips, nuts, candies. Gently mix until just combined.
Cookies ready to bake
Using 2-3 tablespoon scoop, place about 6 cookies on prepared baking sheet. Slightly flatten cookies and add a few M&M’s on top to make them extra pretty.
Original lacy cookie
The original recipe does not contain flour, so the cookies spread out and are thin and crispy. This is the way my husband likes them best.
Flour added
If you want a thicker, chewier cookie you can add 1 cup of flour to the mixture.
This is my favorite.
Baked cookies
Bake 12-15 minutes at 350 degrees. Cool for a few minutes on baking sheet, then move to cooling rack.
Delicious snack – especially with a big glass of milk, or a cup of coffee.
Freezing cookies
Can store in airtight container for a week – seriously – they will not last that long. Or you can try to hide them from yourself, by placing them in freezer bags and storing in the freezer. Enjoy!!

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup creamy or chunky peanut butter
  • 1 1/4 cup brown sugar
  • 1 cup white sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 2 teaspoons baking powder
  • 4 1/2 cups oatmeal, old fashioned or quick (but not instant) If you use the old fashioned oatmeal, the cookies will have more crunchy, chewy texture.
  • 1 cup M&M’s, regular or mini
  • 1 cup chocolate chips
  • 1 cup walnuts, chopped
  • 1 cup flour – optional Use if you want cookie to be more firm.

Instructions

  • Preheat oven to 350 degrees and line baking sheets with parchment paper or silicone mat.
  • Cream butter, peanut butter, brown and white sugars together.  Add eggs and mix well.
  • Add vanilla and baking powder.   Mix.
The traditional  recipe did not call for any flour, but over the years the consistency of butter and peanut butter may have changed.  Without the flour, the cookies are thin and crispy.  With the flour, they have a chewy texture, more like traditional oatmeal cookies.
  • Add favorite chips, candies,  nuts.  Try butterscotch chips, raisins, toffee bits, peanut butter chips or pistacios. Gently mix, until just combined.
  • Use 2 tablespoon scoop and place  about 6 cookies on prepared baking sheets.  Slightly pat down.  Place 4-5 M&Ms on top to make them extra pretty.  Bake 12-15 minutes or until slightly brown. Can also use a 3 tablespoon scoop and bake the cookies longer -if you want BIG Monster Cookies.  Cool a few minutes on the baking sheet, then move to cooling rack.  Probably have to taste some at this point.
  • After cookies are completely cooled, you can keep in airtight container for a  week  (but I doubt they will last that  long)!  You can also put them in freezer storage bags and freeze them.  Of course, once you know they are there – hard to resist – just taking one out at a time….they won’t last long.

Notes

We made these growing up, using original recipe.  With 6 of us kids, they probably didn’t last long.  I think we got the recipe from my Aunt Helen Davitt Ripperger.  She said her kids loved to make the big batch because she would buy a new trash can and let mix it up in it.  Fun memories.
