This recipe is another family favorite. It’s so easy to prepare and makes a quick tasty dinner or brunch.
I have made one half of the recipe in the pictures. A 6-inch square baking dish or a similar size works well. I have also doubled this recipe in a 9×13-inch pan.

Pour the salsa in the baking dish and swirl around to cover the bottom.

Sprinkle the grated cheddar cheese over salsa.

Mozzarella cheese is the next layer. Monterey Jack cheese or other varieties can also be used. Experiment and see what flavors you prefer.

Side note here: I love this kitchen scale. I often buy items in bulk and besides that I found myself guessing on weights or spending time looking up how to convert weight to cups. I bought this scale and can’t believe how much I use it and wonder why I didn’t get one sooner.

Back to the omelet-Blend the eggs in a blender and add sour cream and blend again until smooth and pour over the cheeses.

Bake until a knife inserted in the center comes out clean. It takes about 30 minutes for this one half recipe.

Serve with additional salsa, tomatoes or fresh herbs.
Zippy Cheese Omelet
Ingredients
- 1/2 cup salsa
- 4 ounces cheddar cheese, grated
- 4 ounces mozzarella cheese, grated
- 6 eggs
- 8 ounces dairy sour cream
Instructions
- Preheat oven to 350 degrees. Pour the salsa into the bottom of a 10-inch quiche dish or pie plate. Sprinkle cheeses over sauce. In a blender container place eggs; cover and blend until smooth. Add sour cream; cover and blend again until smooth. Pour this egg mixture over cheeses. Bake, uncovered, in a 350 degree oven for 35-40 minutes or until a knife inserted near the center comes out clean. Serve with additional salsa, tomatoes or fresh herbs.
