Do you ever watch the Great British Baking Show? It is so interesting to watch because they often use different ingredients and terms than we do. I noticed that they often use crystallized ginger in baked goods, especially in cookies and quick breads. I ordered some from Amazon to try, then just by chance, last week Sally’s Baking Blog had a recipe using the crystallized ginger in her Lemon Ginger Cookies.
These cookies are like a dressed up sugar cookie! Adding lemon zest and ginger adds so much flavor! The crystallized ginger is potent, so make sure it is finely chopped. You add some of the ginger to the dough and you also add just a few pieces to the top of the cookies before they are baked.
Once the cookies are cooled, drizzle with a lemon glaze. The lemon glaze is just two ingredients whisked together – powdered sugar and lemon juice. The glaze will be set in about one hour.
