Tiramisu

Our son, Andrew, has been living at home the past few weeks while he is doing a Physical Therapy rotation in St. Joseph. It has been so fun having him here! Most weeks we have created special treats in the kitchen – we made blinis, babka, cinnamon rolls, grilled rice balls – and this week we made Tiramisu.

You dip ladyfingers in a mixture of espresso and Grand Marnier and arrange in a single layer in baking dish. (These photos show the second layer.)

You want to make a solid layer, cutting ladyfingers when necessary.

Then beat the mascarpone cheese with milk (or rum – we used milk), then add eggs yolks that have been warmed, then the whipped cream, and finally fold in the beaten egg whites. Spread half of it over the ladyfingers. Repeat with a layer of ladyfingers and a layer of the mascarpone mixture. Then chill for a couple of hours.

After chilling, sift a layer of cocoa over the top. Cover and refrigerate for at least 8-9 hours.
