
Yum! Love some tasty muffins right out of the oven! I had three bananas on the counter just begging to be made into a special treat!

I like to make muffins because they taste so good – and they are so easy to make, plus I usually have everything I need in the pantry and refrigerator. These Quick and Easy Banana Muffins are great to whip up when you suddenly need (or want) a special treat.
One difference to the recipe below is that I grated the nutmeg I used, instead of using purchased ground nutmeg. Either works great.
Start by preheating your oven, placing cupcake liners in a muffin pan and whisking the flour, baking powder, baking soda, salt, cinnamon and nutmeg in a bowl.

On medium speed, mix the melted butter, brown sugar, egg, vanilla and milk. Pour in the dry ingredients and mix. You could also add nuts or chocolate chips at this stage.

Spoon the batter into liners, filling about 3/4 full. I like to add a bit of cinnamon-sugar mixture and sparkling sugar on top (of course) – I like a crunchy top on my muffins. Purely optional!

Bake, following recipe directions, starting temperature at 425 degrees and then reducing to 350 after 5 minutes, to give them maximum height. They look so good as you take them out of the oven.

Cool for 5 minutes in the muffin pan, then place on cooling rack – they are yummy at any temperature – but especially delicious when still warm from the oven.

Wonderful banana muffins flavored with cinnamon and nutmeg – just what you need with your morning coffee or tea!

Note: I did use freshly ground nutmeg and I added the cinnamon-sugar mixture and sparkling sugar to the top of the batter before baking.
