Pure Comfort Food – Goulash

Goulash is pure comfort food! And it is made all in one pot! You brown ground beef, add onion and garlic and sauté. All the rest of ingredients are added, waiting until right before serving the add the cheeses.

This is good “pantry” dinner. Vary the ingredients to match what you have on hand. You could substitute Italian sausage, or other ground meat, for the beef. You could add green peppers, mushrooms or corn. Paprika is often listed as a goulash seasoning.

Tastes so good – especially on a cool, chilly night. Top with fresh herbs and extra cheese, if desired, and serve with some crusty rolls. Dinner is ready! A favorite comfort food! Enjoy!

Ingredients

  • 1 pound lean ground beef
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 15-ounce can diced tomatoes with their juices (I used Fire Roasted Diced Tomatoes)
  • 1 15-ounce can tomato sauce
  • 1 cup beef stock or red wine (I used beef stock)
  • 1 tablespoon Worcestershire sauce
  • 1 cup water
  • 2 cups elbow macaroni
  • 2 ounces cream cheese, at room temperature
  • 3/4 cup shredded Cheddar cheese
  • Toasted crusty bread, for serving
  • Toppings – fresh herbs, extra Cheddar cheese, if desired

Instructions

  • In a large saucepan, brown the ground beef over medium high heat, stirring often, until it's about half cooked. Add the onion, garlic, salt and pepper and sauté until the meat is cooked and the onion is softened, about 10 more minutes. Pour in the tomatoes, tomato sauce, beef broth or wine, Worcestershire and 1 cup of water. Stir, bring to a simmer, and cook for 10 minutes, until it's almost bubbling.
  • Add the macaroni and cook until tender, about 15 minutes. Do not overcook or the elbow macaroni will start to falling apart.
  • Just before serving, stir in the cream cheese and mix until melted and blended. Toss in the Cheddar cheese, give a stir. Top with fresh herbs or extra Cheddar cheese, if desired. Serve with crusty bread. Enjoy!
