YUM! Doesn’t a crispy cheesy pan pizza sound good? I had been wanting to try a pizza baked in a cast iron skillet and when I saw this one on King Arthur’s Flour website I decided to give it a try….and I was not disappointed! This is their 2020 Recipe of the Year, with a 5-star rating.
This is an easy recipe, however, the dough does need to refrigerated for a minimum of 12 hours, or up to 72 hours. Then about 3 hours before you are ready to bake the pizza, you will need to take the dough out of the refrigerator to begin the final preparations for baking.
The cast iron skillet gives the crust a perfect crunchy, yet tender crust. This recipe has you place the cheese on the crust, then a few spoonfuls of pizza sauce, and then more cheese. You could also add other toppings, if you like, but they recommend cooking them first. As soon as you can, remove the pizza to a cooling rack, so the crust doesn’t get soggy.
I sprinkled a bit of freshly grated Parmesan on the top right after taking it from the oven. If you have fresh herbs on hand, that would be pretty too. This is an amazing pizza! Enjoy!
