This is called Chocolate Zucchini “Bread”, but it has a deep rich chocolate flavor – and a moist -fudge like texture – and it tastes like chocolate cake. So it is perfect for an afternoon snack! I think if you call it a “bread”, there is less guilt!
However, this Chocolate Zucchini Bread, is filled with 1 1/2 cups of shredded zucchini. Who knew chocolate and zucchini would pair together so nicely? Leave the peel on and shred the zucchini with a box grater. Just lightly blot with a paper towel after shredding.
When you are in the need of a chocolate fix, this would work! This bread will keep in the counter for about 4 days, and it also freezes well.
