Chocolate Fudge Pop-Tarts – such a treat! When all the kids were still home, we would occasionally buy Pop-Tarts. Of course, we had to buy several boxes so everyone could select their favorite flavor – mine was always the chocolate ones. They would not rate as a nutritious breakfast – but they are delicious snacks.

This recipe for Chocolate Fudge Pop-Tarts from the Half Baked Harvest blog has a rich chocolate fudge sauce sandwiched between two layers of chocolate sugar cookie dough, then it is finished with a sweet milk chocolate frosting and topped with pearl sugar.

Fun Fact: “Originally, the Pop-Tarts product was called, “Fruit Scone.” It was later changed, and a Kellogg’s spokesperson told us that the “Pop-Tarts name was influenced by Andy Warhol’s Pop-Art in the 1960s.” With that, the pastry’s popularity took off. ” Just think, if they hadn’t changed the name, we probably would never of had chocolate Pop-Tarts!

Look at that deep chocolate fudge sauce – sooo much better than the ones you buy in the store! You can add meringue powder to the frosting to give it more shine.

The Swedish pearl sugar is a pretty way to top these pop-tarts, but you could also use decorating sugar or chocolate sprinkles. If you are a fan of salt and chocolate together, you could sprinkle the pop-tarts with coarse salt.

Notes: I rolled the dough out 1/8″thick like the recipe specified, but I only had 10 pop-tarts, instead of 16. I think it would be better if the dough was rolled slightly thinner than 1/8″ inch. I probably should have made the frosting a bit thinner also, but it tasted so good! You shouldn’t put these in the toaster, but they are great warmed up in the microwave for about 10-15 seconds before eating.
