
Muffins – love these breakfast sweets! And these are so yummy – filled with apples, walnuts and raisins – so moist and tasty. These are from “Baking, From My Home to Yours” by Dorie Greenspan. Take time to check out her wonderful cookbooks.

Start by whisking the wet ingredients in one bowl and the flour, sugar, baking powder and soda, cinnamon and salt in another.

Add the brown sugar and oatmeal to the dry ingredients…looking good already. Gently mix this into the wet ingredients, stirring just enough to combine. When you make muffins, the less you mix, the better.

Chop up the walnuts and apples.

Gently stir in the walnuts, apples and raisins.

Divide batter into 12 muffin tins, lined with cupcake liners or lightly sprayed with no-stick spray. Of course, I think all muffins should have a topping of some kind, so I sprinkled a bit of Cinnamon Sugar and Sparkling Sugar on mine. You can also bake the batter in an 8-inch pan.

Bake at 400 degrees for about 15-20 minutes for the muffins, or 30-35 minutes if using an 8-inch pan. Bake until golden brown on top and when an inserted toothpick comes out clean.

Cool on a wire rack for a few minutes. These are so good right out of the oven. I like them just like this, but Dorie says they are also good with butter, jam, cottage cheese or yogurt.

YUM! You just may want to make these this weekend. You could change the fillings if you like, substituting in your favorite nuts and switching out the raisins for dried cranberries.
