
With the cooler weather comes the cravings for certain snacks like caramel popcorn. Of course it tastes great any other time of the year too.
Caramel Popcorn
Yummy, sweet snack
Ingredients
- 7 1/2 quarts popped popcorn
- 1 cup butter
- 2 cups brown sugar
- 1/2 cup light corn syrup
- 1 tsp baking soda
Instructions
- Pop popcorn and measure 7 1/2 quarts into at least two large pans making sure to remove any unpopped kernels. I use roasters for this. It is better if the mixture isn't too thick in the pan when it bakes. Set aside and preheat oven to 200 degrees.Mix butter, brown sugar and light corn syrup in a saucepan over medium heat and boil for five minutes. It is important to keep the temperature at medium as too much heat will cause the mixture to scorch or burn. Remove from heat and add the baking soda. Stir into the popcorn until evenly coated. The baking soda is very helpful in making the caramel softer and easier to combine with the popcorn. Bake for one hour, stirring every 15 minutes.
Caramel popcorn is great served fresh and hot from the oven and also keeps well stored in an air tight container. This is a family favorite and is fun to package in food gift bags, jars or other creative containers and share.
