Celebrate Cooler Weather with Autumn Scotcheroos

When I was a little girl, I really thought that my Grandma Davitt, invented Scotcheroo cookies. I have the original recipe card that I wrote out and the title is “Grandma Davitt’s Rice Krispies Cookies.” Only when I was older did I find out that lots of people had this special secret recipe.

The recipe below is for half a batch of the original recipe, which makes enough to fill 8 x 8 pan.

The original recipe instructions say to mix the chocolate and butterscotch chips together, then melt them and spread over the cookie layer. To give the cookies an autumn theme, I melted them separately. I spread the melted chocolate chips over the cereal layer, then drizzled the melted butterscotch chips on top.

To add little pops of color, I topped them with Monster Mix sprinkles. Scotcheroos are another of my favorites! The memory of making them with Grandma Davitt makes them extra special!

Autumn Scotcheroos

Ingredients

Cookies

  • 1/2 cup white corn syrup
  • 1/2 cup sugar
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 3 1/2 cups Rice Krispies cereal

Frosting

  • 3/4 cup chocolate chips
  • 1/4 cup butterscotch chips
  • 1-2 teaspoons vegetable oil, optional
  • autumn sprinkles, optional

Instructions

Cookies

  • Lightly spray 8 x 8 inch pan with non-stick vegetable spray.
  • Bring sugar and syrup to boil in a saucepan, stirring occasionally. Add peanut butter, vanilla and salt. Stir until blended.
  • Put Rice Krispies cereal in large mixing bowl. Pour peanut butter mixture over cereal and mix together. Press into 8 x 8 pan. Use spatula, lightly sprayed with no-stick vegetable spray, to lightly press into even layer.

Frosting

  • Melt chocolate chips in the microwave or on stove on a low setting. When melted spread over cookies.
  • Melt butterscotch chips in the microwave or on stove on a low setting. If necessary, add 1-2 teaspoons vegetable oil, as needed to thin butterscotch chip mixture to drizzle consistency. Drizzle over chocolate layer. Top with sprinkles, if desired.
  • Option – Melt chocolate and butterscotch chips together and spread on top of cookie layer.

Bake M&M Cookies for July 4th Celebration

July 4th is almost here! Time to gather the family and have a BBQ, play games and eat lots of food – including cookies! These holiday M&M cookies are a favorite!

You can vary the type and color of M&Ms and chips to suit the holiday or your special occasion. For these I added 1 cup of the Peanut Butter Red, White and Blue M&Ms, 1/2 cup of the mini-Red, White and Blue M&Ms and 1/2 cup of white chocolate chips to the cookie dough.

Right after they come out of the oven add a few more M&Ms and chips to make them look extra pretty.

Place on a cooling rack until completely cool.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup unsalted butter, at room temperature
  • 1 1/2 cups light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 2 cups M&M milk chocolate candies*
  • Flaky sea salt, for sprinkling
  • Extra M&Ms, for pressing into cookies, optional

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.
  • In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and sea salt. Set aside.
  • Using a stand mixer, cream butter and sugars together for about 1 minute. Add in the eggs and vanilla and mix until combined. With the mixer on low, slowly add in the dry ingredient. Stir in the M&Ms.
  • Form the cookie dough into balls, about 2 tablespoons of dough. Place on prepared baking sheet, about 2 inches apart. Note-you can chill the dough for 30 minutes or up to 72 hours in the refrigerator before baking.
  • Bake cookies for 10-12 minutes or until the edges are slightly golden brown. Remove from the oven and sprinkle with flaky sea salt. You can also gently press extra M&Ms on top of the cookies to make them extra pretty. Let the cookies cool on the baking sheet for 2-3 minutes. Transfer to a wire cooling rack and cool completely.

Notes

For these Valentine cookies I used 1 cup of Valentine M&Ms and 1 cup of white chocolate chips.  I used an additional 1/4 cup of M&Ms and 2 tablespoons of white chocolate chips to decorate the tops after decorating. The sprinkles are just for fun…they don’t stick very well – but it makes the cookies pretty when you serve them.

Bake Some Brown Butter Peanut Butter M&M Cookie Bars This Weekend

It is hard to beat a good chocolate chip cookie – unless you take the same dough and add peanut butter M&Ms – and brown butter! Baking with brown butter is a game changer – it adds such a wonderful depth of flavor. If you haven’t tried it, you are missing out.

Bar cookies are so easy – just mix, put in your pan and bake. No scooping and waiting for each batch to bake. I used the recipe below with a few exceptions – I only made half a batch and I did not sprinkle the flaked salt on top.

I also gently pressed in a few extra M&Ms on top of the dough before I popped the baking dish in the oven. The extras just make your cookies look so pretty. Try this with holiday M&Ms too.

This makes a quick snack to make for your family – they will love these chewy cookie bars.
