Ingredients
2cupssemisweet chocolate chips
1cupcreamy peanut butter
1/2cupbutter
3teaspoonsvanilla
14cupsRice Chex cereal
3cupspowdered sugar
Instructions
Place the chocolate chips, peanut butter and butter in a medium microwave safe bowl. Microwave on high for 1 minute. Remove from the microwave, stir. Return to microwave for about 30 seconds longer or until the mixture is smooth when stirred. Stir in the vanilla and stir.
Measure the cereal into a large mixing bowl.
Pour the chocolate and peanut butter mixture over the cereal and stir until the cereal is evenly coated.
Pour the coated cereal into a large ziplock or crock pot liner bag. Add the powdered sugar. Seal or twist the bag shut and shake until the cereal is well coated.
Spread out on parchment paper or onto baking sheets. Let set until cool.
Store in airtight container in the refrigerator. We like to place the Muddy Buddies in snack sized ziplock bags and store in the freezer. If you have never tried them frozen - you are in for a treat!
Notes
This recipe is for a double batch, you can easily half all the ingredients. I like to add a bit more vanilla than the original recipe on the box of cereal, and a little less cereal so that the cereal has a bit more of the chocolate-peanut butter coating on it.
