Ingredients
1mediumoverly ripe banana, mashed, about 1/3 cup
1 tablespoonmelted coconut oil or butter
1 tablespoonhoney or maple syrup
1 largeegg
1teaspoonvanilla extract
1/4 cupall-purpose flour
1/2teaspoonbaking soda
1/4teaspooncinnamon
1/4teaspoonsalt
1/4cupsemi-sweet or dark chocolate chunks
Instructions
In a small bowl, stir together the mashed banana, coconut oil or butter, honey, egg and vanilla until combined. Add the flour, baking soda, cinnamon and salt. Mix until just combined. Fold in the chocolate chunks.
Pour the batter into a 10-12 ounce microwave-safe mug. Microwave on full power for 1 minute and 35 seconds to 2 minutes, it is better to under bake. Eat warm with a smear of butter and a drizzle of honey. Enjoy!
